Spider's Multicultural Mint Salsa

This is a cross between a Latino salsa and an Indian raita. Serve it with grilled meats.

bullet1 bunch of mint, minus what you need for your mojito
bullet1 medium cucumber, skin on, seeds removed
bullet8 scallions, including a few inches of green part
bullet8 oz sour cream
bulletRind of two limes
bulletSalt and pepper to taste

Finely chop the mint and dice the cucumber and scallion; combine in a glass bowl. Grate the rind from the limes directly into the ingredients in the bowl, so as not to lose none of the oil from the skin. Add the sour cream, salt and pepper and stir gently to combine.
