This is a cross between a Latino salsa and an Indian raita. Serve it with grilled meats.
 | 1 bunch of mint, minus what you need for your mojito
 | 1 medium cucumber, skin on, seeds removed
 | 8 scallions, including a few inches of green part
 | 8 oz sour cream
 | Rind of two limes
 | Salt and pepper to taste

Finely chop the mint and dice the cucumber and scallion; combine in a glass bowl. Grate the rind from the limes directly into the ingredients in the bowl, so as not to lose none of the oil from the skin. Add the sour cream, salt and pepper and stir gently to combine.
