Spider's Spring Salad

This is a light favorite for warmer weather or if you live in Chicago, the hope of warmer weather that comes in spring.

1 head of red leaf lettuce

1 sweet red pepper (cut into thin slices)

½ medium sized red onion (thinly sliced)

1 can mandarin orange slices (drained)

bullet

5 ounces Boursin Cheese, plain or black pepper (crumbled)

Olive oil

bullet

Lemon vinegar

Clean and prepare the lettuce into bite size pieces and place in a large salad bowl. Add the red pepper and onion. This can be done ahead of time and stored in the fridge for a few hours. Then just before serving, add the oranges, cheese and a splash of oil and vinegar. Toss and serve.

If you want to make this into more of a main course, just add grilled chicken and it's perfect for light fare dinner menu!
