Curried Lamb With Apple

2 lbs. boneless lamb, in cubes

1½ Tbsp. hot curry powder

1 onion, sliced

bullet

3 cloves garlic, chopped

1 red bell pepper, sliced

bullet

1 peeled and cored apple, in cubes

bullet

3 carrots, sliced

bullet

1 tsp. dried thyme

bullet

¼ cup dry vermouth

bullet

2 Tbsp. balsamic vinegar

Mix all ingredients in a casserole dish. Cover and bake for 1 hour at 325°. Serve over couscous.
