Tuscany Stew

bullet4 links of Hot Italian Sausage (cut into bite size pieces)
bullet4 boneless, skinless chicken thighs, or 2 skinless, boneless breasts (cut into bite size pieces)
bullet1 medium onion (chopped)
bullet1 red pepper (chopped)
bullet2 cloves garlic (chopped)
bullet½ an eggplant (cut into 1 inch cubes)
bullet¼ tsp rosemary
bullet¼ tsp basil
bullet1 jar of Ragu Classic Alfredo (shortcut, can substitute for homemade)
bulletSplash white wine
bullet¼ cup grated parmesan

Place the sausage in a plastic container with a little water and microwave for about 3 minutes. Remove and drain. This will remove excess grease.

Place all dry ingredients in a casserole dish.

Pour in the jar of sauce (approximately one cup)

Splash white wine into the jar to get excess and add to stew.

Add the parmesan and mix thoroughly. Cover and bake at 325 for 50 minutes.
