This is a refreshing drink to accompany Latino food or just to sip on a summer evening. It's one of the few exceptions to my rule against mixing sugar and alcohol, and I use less than most bartenders would, so expect more tartness than you might be used to.
Some say that a real mojito must be made from a special kind of mint. If you have an Hispanic grocery nearby, buy your mint there.
You will have to buy a bunch of mint, and if you use it all to make mojitos, you will become non-functional. So make a drink and use the rest for
Spider's Multicultural Mint Salsa.
 | 8 fresh mint leaves

 | 1 tsp sugar
|
 | 2 Tbsp fresh lemon juice
|
 | 2 oz white rum
|
 | Club soda |
Put the mint leaves in a tall glass, pour the sugar on them and crush them thoroughly with the back of a spoon. Add the sugar and lemon juice and stir thoroughly. Add rum and lemon juice and stir. Add ice, if you wish, and fill the glass with club soda.
