When we went to Buca di Beppo after opening
night of Entertaining Guests,
sparkling wine was definitely in order. Usually, Italian sparking wine means
Asti Spumante, which is just too sweet for me. But in a night when everything
went right, they had an Italian sparkling wine called Rotari Brut. Later on,
I came up with a way to make it even more festive. Kir Royale is generally
champagne combined with cassis, a red currant liqueur. My version uses
Italian sparkling wine and Campari, a slightly bitter Italian apertif.

 | 1 ounce of Campari, well chilled |
Put the Campari in champagne flute and fill it with the Rotari. Mix
very lightly and enjoy.
